But aside from the pain, when I try hands (in actual clay), I've done one of two things - roll little fingers and smoosh them onto a palm-shaped blob or cut them from a vaguely hand-shaped blob. The later technique works a little better, but the fingers end up rather squarish. There's no hint of tendons, joints or nails either, not like you very excellent hands.

I'd love to see a montage if you doing just one hand.

I do "cut them from a vaguely hand-shaped blob" :) It is very common technique! To make them rounded I smooth every single finger with tips of my fingers and soft flat brash. Sorry I do not have any time to make tutorials :(
